Aspergillus Oryzai also known as Koji is a mold, a good mold. It’s how soybeans becomes miso and how rice becomes sake. So of course it can be used to brew beer,right? Driftwood Brewing’s latest limited release Shokunin, a sake-beer hybrid Koji ale at 6.4% features this special rice mold. Resulting in a beer with notes of stone fruit and citrus.
