Category 12 – Raw Ale

This new beer from Category 12 is a perfect blend between ancient brewing traditions and modern West Coast brewing sentiment. Believe it or not, but the wort was never boiled for this! The risk greatly outweighs the reward however. It benefits from a primary fermentation with Brettanomyces and the added infusion of red cedar.
