Theory And practice – Pet Nap Boskoop & Newtown 7.2% – 18th Century heirloom apples fermented with wild yeasts and aged on less for 8 months the the sediment is removed.

Ever Close Union – Cider Co-Fermented w/Crabapples 6.6% – Macintosh cider fermented w/wild yeasts and crabapples. Aged on crabapple pomace then aged in neutral oak for 8 months. Bottle Conditioned.
